In this episode of Poorboys, I’ll be showing you how to save big money by making your own Granola.

Ingredients

Instructions

- First, preheat your oven to 275 degrees F (135 C)
- Mix the oats, flax, sunflower seeds, walnuts and cinnamon in a medium mixing bowl. Once mixed, add
  the honey and stir until all of the oats and nuts are thoroughly coated with the honey.
- Spread the mixture on to a cookie sheet, patting it down until it is about 3/4 of an inch thick (2 cm).
- Place the cookie sheet with the granola mixture into the oven for 30-35 minutes.
- Remove from the oven and allow 15-20 minutes for the mixture to cool.
- Break up the mixture with a spatula, add to a bowl and mix in the raisins.
- Store in an airtight container.

Feel free to omit or add any type of nuts, but try to keep the oat to nut ratio somewhat similar, or the mixture may have a tough time sticking together. Additionally, this would go great with some dried cranberries or chopped up dried apricots, but those would cost much more than raisins. Last night, I needed a quick meal before I went to work and saw some eggs and tortillas in the fridge and figured, what better to make than a breakfast burrito.

This is probably one of the quickest and easiest meals you could ever make. First take the eggs crack em all and put em in a bowl. I used 4 eggs and 2 whites to make it just a tiny bit healthier. You could use all full eggs or all whites, it will work either way. Mix up the eggs in the bowl with a few ounces of milk. I like to add a bit of diced onion and pepperoncini (banana peppers) to the eggs. Put em in a pan and get to scrambling (medium heat).

Once they are pretty much done, I like to toss in some velveeta (fake cheese) or you can use cheddar. After you put the cheese on, cover the pan with a tortilla (this will heat/steam the tortilla and make it soft and pliable). Once the cheese is melted, toss it all on the warm tortilla, top with some salsa and you’re done!

If you want to make it a bit more hearty, you can get yourself some chorizo (mexican sausage), and cook that up on the side and add it to the burrito at the end.
