In this episode of Poorboys, I show you how to make some delicious Huevos Rancheros, and as always it’s cheap. You can see the list of ingredients and prices below.

Cooking Instructions

Combine the tomatoes, onions, pepper, garlic, cumin, salt and vinegar into a blender and mix until all the ingredients are thoroughly incorporated. Set this mixture aside.

Combine black beans, cumin, salt, cayenne and 1/4 cup of water into a microwave-safe bowl and cook for 2-3 minutes. Once done, mash the beans to create a paste. These should look similar to refried beans. If the mixture is too thick, just add a bit of water.

Add approximately half of the tomato mixture to a saucepan and cook until until it reaches a thick consistency, approximately 3-5 minutes. Set this aside.

Cook the eggs to their desired style; over-easy, sunny-side up, etc. At the same time, heat up two corn tortillas.

Add about half of the bean mixture to a plate and spread it out, place the two heated corn tortillas on top, add the two eggs on top of that, and then cover the eggs with the reduced sauce.

Add cheese, hot sauce or jalapenos if you want. For a truly authentic taste, try some Cotija cheese on top. Enjoy!

Last night, I needed a quick meal before I went to work and saw some eggs and tortillas in the fridge and figured, what better to make than a breakfast burrito.

This is probably one of the quickest and easiest meals you could ever make. First take the eggs crack em all and put em in a bowl. I used 4 eggs and 2 whites to make it just a tiny bit healthier. You could use all full eggs or all whites, it will work either way. Mix up the eggs in the bowl with a few ounces of milk. I like to add a bit of diced onion and pepperoncini (banana peppers) to the eggs. Put em in a pan and get to scrambling (medium heat).

Once they are pretty much done, I like to toss in some velveeta (fake cheese) or you can use cheddar. After you put the cheese on, cover the pan with a tortilla (this will heat/steam the tortilla and make it soft and pliable). Once the cheese is melted, toss it all on the warm tortilla, top with some salsa and you’re done!

If you want to make it a bit more hearty, you can get yourself some chorizo (mexican sausage), and cook that up on the side and add it to the burrito at the end.
